Ed's Easy Diner to open first restaurant in Wales

St David’s is set to bring another first for Wales with the announcement that Ed’s Easy Diner will be opening within the shopping destination.

The restaurant will be the first that Ed’s Easy Diner has opened outside the M25 and will have a classic 1950’s American theme. The 70-seat diner will occupy a 1,669 sq ft unit within Eastisde, the restaurant quarter at St David’s, on the lower level alongside Boof, YO! Sushi, Spudulike and Bellini’s Express.

Ed’s Easy Diner opened its first restaurant in Soho, London, nearly 25 years ago and has expanded within London and the surrounding areas. The new restaurant in St David’s –jointly owned by Land Securities and Capital Shopping Centres (CSC) – will open in September.

Steven Madeley, centre director of St David’s, said: “St David’s is Wales’ biggest shopping destination but it’s not only about the shops, it’s about the whole shopping experience for our visitors which is why a unique mix of restaurants is important to the scheme.

“Ed’s Easy Diner is a great dining concept and will diversify the range of restaurants we already offer within Eastside and throughout St David’s from Jamie’s Italian and Carluccio’s to Chimichanga and Sale Pepe along with Red Hot Buffet World which is also set to open later this year. It is fantastic for St David’s that we can bring another first for Wales to Cardiff to further enhance the city’s retail and restaurant offering.”

Andrew Guy, operations director at Ed’s Easy Diner said: “We are delighted to be opening in Cardiff’s magnificent St David’s shopping centre; our first diner in Wales and outside of the south east of England. The city’s already burgeoning culinary scene and an ever increasing public demand for a quality fast-casual dining experience means this is an exciting task.”
