Tonkotsu is coming to Cardiff! We’re opening our restaurant in March and can’t wait to bring our homemade noodles and broths to the city.

The heart and soul of our restaurant are our nourishing, comforting bowls of ramen. Each bowl of steaming hot ramen is made with our own fresh noodles crafted daily using mid-century noodle machines imported from Tokyo. The noodles are then cooked to order for precisely 32 seconds in boiling water for that perfect medium bite. All our bone broths are handmade over a two-day cooking process to get the maximum flavour into each bowl of ramen.

Our menu features the signature Tonkotsu ramen – a rich and creamy pork bone-broth enriched with lardo, with thin-cut noodles and topped with roast pork belly, bamboo shoots, bean sprouts, spring onions, burnt garlic oil and a beautiful (seasoned free-range) egg. For those who like something light and spicy, you could try our Chilli Chicken Ramen – a chicken and sea salt broth pimped up with our addictive Eat the Bits Chili Oil – or we have vegan ramen including a Mushroom Miso ramen. For something lighter we have chilled noodles and rainbow salads. All ramen can be customised with extra toppings. You can also enjoy a small version of our ramen as part of our lunch menu, available Monday-Friday lunch.

No visit would be complete without a few of our homemade gyoza or a sharing some plates of of crisp fried chicken kara-age, Eat the Bits chilli chicken wings and the vegan-friendly cauliflower ‘wings’.

If you have little ones in tow, our Kids Okasama Bento Boxes are perfect – with all the ingredients for kids to make their own mini ramen or katsu curry meal.

The drinks menu includes original sake made for us by the Tsuji Brewery in Okayama, an exclusive beer Mikan Shimoda Pale Ale made in collaboration with Thornbridge and our own small-batch gin. The drinks line up is completed by a selection of Japanese whiskies, wines, and cocktails, plus low-alcohol options, soft drinks, and teas.
